Eggy Cheese Soldiers

(Allergens: Egg, Dairy, Wheat)

  • 1 egg, beaten
  • 1 thick slice plain whole grain bread
  • 1 tablespoon vegetable oil or butter
  • 2 tablespoons grated cheddar or other hard mild cheese

Pour the egg in a wide, shallow bowl or pie pan, then soak the bread in it, flipping once, until the bread is completely saturated and nearly all the liquid is gone.

Heat the oil in a large skillet over medium heat and fry the bread until the egg coating is well cooked, about 2 minutes on each side. Sprinkle on the cheese and allow it to melt. Cut lengthwise into four little toast “soldiers”.

Makes 4 “soldiers” or 1-2 servings depending on the age of the child
